Cheesy Chicken and Broccoli Rice

Good Afternoon People,

I am back in the land of internet after a wonderful week away in a tower cottage in the woods and while it’s good to be home, I am already looking for dates I can go back!

After eating very healthily while away all I’ve wanted is indulgent junk and comfort food, and all the husband has wanted is vegetables and healthy food – and this is a satisfying mix of both that I have made a hundred and one times and failed to post (believing that I already had!) I have no pictures and I honestly may never have any because it’s as much as I can do to get it into bowls before the husband and child number 1 start eating it from the pan so here is a generic picture of some broccoli!

Here is the what and how you need to make it!

INGREDIENTS

  • 2 large heads of broccoli, chopped
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 tsp. minced garlic
  • 3 cups chicken broth
  • 1.5 cup jasmine rice (uncooked)
  • 1/2 cup milk
  • 2 tbsp. butter, cubed
  • 125 – 250g Shredded Roast Chicken (1 good handful per person approx)
  • Salt and Pepper, to taste
  • 50-100g cheddar cheese, grated*

Instructions

  • Steam your broccoli for 10 minutes (maximum) and set aside when done.
  • While your broccoli steams, heat your olive oil in a large pan over medium heat, then add the onion and garlic. Sauté for 2-3 minutes, stirring occasionally.
  • In the same sauce pan, add the chicken stock and bring it to a boil before adding your rice. Mix to level out the rice, lower the temperature and cover, allowing the rice to simmer for approx. 12 minutes. Stir occasionally.
  • Once most of the stock is absorbed and remove the cover, season with salt and pepper and stir well before adding in the milk and butter and cooked broccoli and chicken.
  • Mix well to ensure everything is combined and cook to heat through for a further 6-7 minutes.
  • *If you all like melty cheese, stir in the grated cheddar and serve, or if you would prefer, dish up into bowls and sprinkle the cheese on top as desired.
  • Enjoy!
